If you are like me, it seems like there is never enough time in the day to get everything done that I need to. For me, running late starts well before I am even out the door for work. Because of my crazy schedule, I usually skip breakfast, eat my fair share of fast food, and hardly ever exercise, all so I can rush to work and start working on my endless list of tasks.
They say the most important meal of the day is breakfast. I’m not up to date on the research on whether skipping breakfast is that bad, but the mornings when I skip breakfast aren’t great. Typically, when I get to work I am hungry – because I skipped breakfast – so I begin searching for something that will quickly appease my appetite. I indulge in 1 or 2 donuts, or I hit the vending machine for chips and a soda, and maybe even a bag of cookies. It’s not exactly a healthy breakfast, but hey, I still gotta eat! Combine this breakfast of champions with the fact that I sit all morning while working at my desk and it’s no wonder that I feel a little sick to my stomach. By 10am, I am exhausted, hungry, and my mind feels foggy. It almost feels like 3 in the afternoon when I am usually hitting a wall from the soda and double cheeseburger I had for lunch. Fast forward a few years down the road and I imagine I’ll have gained a substantial amount of weight, I’ll be constantly tired, and probably made even more bad eating habits.
After giving it some thought, I concluded that I needed to change my eating habits for each meal. But to set a realistic starting goal, I needed to adjust what I was eating for breakfast. In order to make this work, I knew I needed something that would fit with my busy schedule. I tried a search for “healthy breakfast recipes for on the go” and was inundated with results. There was an overwhelming amount of information and recipes on the subject. I decided to start on the first result and give it a shot.
I found that smoothies were one of the most favored recipes out there for a healthy breakfast on the go. And I can see why! They are delicious, fairly healthy and quite filling. After drinking them for awhile I noticed that I felt better in the mornings, had more energy, was more alert and even noticed some of my tighter-fitting clothes were starting to become a little more loose. There are a few downsides to having smoothies for breakfast. First, regularly shopping for new smoothie ingredients is time-consuming and expensive. It wasn’t something I had considered at the start of my diet, but I guess it’s just another price that you have to pay for healthy living. Second, each morning that I made a smoothie required a little more time than before, but it was worth it.
My next approach to a healthy breakfast that I could eat on the go was centered around some with a little more protein. I found a recipe for toast with avocado and egg. At the time, I thought it would be my favorite healthy breakfast recipe, but more on that later. I thoroughly enjoyed making this breakfast as it was fairly simple – one cooked egg and a mashed avocado on slice of toast with a dash of salt and pepper. Great taste, simple, fairly quick to prepare, and no utensils required meant I could eat this delicacy on the go.
I found that these breakfasts and several others were faster and cheaper than vending machine junk or a greasy fast food breakfast. I realized though that I still needed vitamins that I was missing out on, even though my smoothies are packed with natural vitamins.
