An electric pressure cooker is a must have at my house. It’s my favorite appliance and it has saved my night on too many occasions to count. I even use it to reheat leftovers.
First things first. If you are new to using a pressure cooker then you may want to start off with the water test, it’s literally boiling water in your pressure cooker to make sure that everything is working properly. No one will tattle if you don’t bother though.
Next up is hard boiled eggs. Most people use the 5-5-5 method which is 5 minutes at pressure, 5 minutes, quick release and 5 minutes in an ice bath but if you are at a higher elevation you may need 6-6-6. For either method you will use the little rack that comes with your pressure cooker and put water in the bottom inch or so of your pressure cooker and the eggs on top of the rack.

If you have always wanted to make your own stocks and broths but hated how long it takes, this is for you. The entire process is under two hours unless you are using large beef bones and the results are heavenly. The recipe can be used for any kind of stock you want, just use your leftover bones, even fish bones. (A tip for extracting more from the bones, add a bit of vinegar.)

Speaking of broth… Have you met my friend Pho? (pronounced fu the u in up) Don’t tell my husband but I just may love this dish more than him. sssssshhhhhhhh……. If you haven’t had it run to your nearest Vietnamese restaurant STAT! and get some or just make it yourself with this recipe. You may think it sounds crazy, you may want to just ignore this and move on but I’m telling you that it would be a big mistake. Huge. How about Beans? Are they your personal nemesis? Have you only ever used canned because they intimidate you? Well No More my friend. this is the appliance that will completely change your bean making life! Really. You don’t even have to pre soak them. Throw in some of that amazing stock you just made and any other seasonings you’d like, the beans and go. Perfect beans. If you add anything acidic, like tomato, you will need to add time, I at least double the time if I’m making a chili. No recipe really needed here, it’s that easy.
